My mom came up this Citrus Nacho recipe a few years ago and made them for me one time when she was visiting. They were so yummy!!! And I still enjoy making them. They are perfect for a super easy, quick, healthy lunch.
First you melts some cheese over tortilla chips.
Then cut up cilantro and avocado and add to the cheese chips.
Then add however much lettuce you want. Next you douse it in lemon juice and sprinkle lemon pepper on top. I usually don't like lettuce too much without dressing but this lemon-lime flavor really makes this little nacho salad POP!
TA-DUH!!! Now you have a YUMMY healthy lunch!!!
